Vegan Bean and Vegetable Paprika Stew

 

Ingredients

  • 2 tbsp Paprika (I used smoked)
  • 1 tbsp Italian dried herb blend
  • Garlic (3 cloves – less if you’re not a garlic fan)
  • 1/2 of a red chilli
  • Red onion
  • Bunch of kale
  • 1/2 a pack of spinach
  • 1 pepper
  • 1 carrot
  • 1/2 a pack of runner beans
  • 1/2 a broccoli head
  • 1/2 a sweet potato
  • 2 tomatoes
  • 1/4 pearl barley, lentil and split pea mix (I got mine from sainsburys)
  • One can of mixed bean salad
  • One can of tinned tomatoes
  • Stock cube
  • Nutritional yeast
  • Fresh basil

 

 

  1. Firstly, fry off onions with garlic in a splash of water
  2. Next, add in sweet potato and pearl barley lentil mix
  3. Place one stock cube into around 1L of water and add to pot (ensure there is enough to cover the potato and lentil mix)
  4. Chop and add in the rest of the vegetables to the pot
  5. Add in paprika, chilli and herbs
  6. Cover with a lid and simmer for 40 minutes, stirring regularly
  7. To serve, add fresh basil and nutritional yeast to taste!

This is one of my go to meals when I’m feeling lazy, but still want something nutritious as it is super simple to make. It is also great for when you are running low on food as you can easily swap out ingredients in the recipe with whatever you have in the house.
