Food For Thought

Christmas and New Year, for me anyway, were a time of indulgence. Chocolate for breakfast became the norm, followed by more for lunch and dinner too. That alongside copious amounts of roast potatoes and  red wine left me with an unrelenting food baby and horrible skin.

Now that 2017 is upon us, it is time to get back to normal. While I’m not the healthiest person in the world (I enjoy my fair share of Vego chocolate and oreos), I certainly don’t allow myself to satiate my sweet tooth with junk foods everyday.

Many of you may be in this same post-indulgence funk, so I thought I would share with you a day of meals in the hope that you might draw some inspiration from it!


I started the day with oat pancakes with some cooked apples on top. It was my first time making these, and they tasted amazing. They are super easy to make, so if you want a recipe be sure to let me know.

For a drink I had a simple matcha green tea with coconut milk.


Lunch was some delicious olive bread, topped with avocado. I mashed it up with some garlic, pepper and salt.


For dinner I made pearl barley, and mixed it with chopped tomatoes and lots of veggies. I then topped it off with my two essentials: nutritional yeast and coriander.
